Aged in American oak casks through the traditional “solera y criaderas” method in our winery in El Puerto de Santa María, a seaside town situated in the Sherry triangle.
Pale yellow in colour, reminiscent of yeast on the nose. Dry and crisp on the palate.

This wine, partially aged under a veil of yeast like the Finos (the biological process) completes its ageing without the yeast (oxidative process).
Amber in colour with a nutty aroma on the nose. Light, soft and round on the palate, with a long aftertaste.

Initially aged under a veil of yeast, followed by several years ageing in the oxidative process.
This is a classic Amontillado, with nutty and sweet aromas on the nose. Dry and round on the palate, with a long finish.

A dark colour, with amber shades. This wine combines the delightful finesse of the Amontillados on the nose with the body of the Olorosos on the palate.

Mahogany in colour, with penetrating smoky aromas. Reminiscent of dark chocolate and walnuts in the mouth. Intense and concentrated finish, lightened by a tangy acidity.

The Moscatel grapes, cultivated in our vineyard Las Cruces are laid out in the sun until they become raisins. Fermentation is arrested early, in order to keep the natural sugar of the grapes.
It has a dark mahogany colour, with a green-yellow rim. Intense citrus and floral aromas. Soft and sweet on the palate, it is reminiscent of honey, citrus and spices. Very sweet and long on the palate, but with a balance of natural acidity.

The grapes Pedro Ximénez are laid out in the sun for several days. Fermentation is stopped, in order to keep the natural sugar of the grapes. Afterwards this wine is fortified and then aged in the “solera and criaderas” system.
Dark mahogany in colour and viscous. Redolent of ripe fruit in the mouth, dried figs and roasted coffee beans. Very sweet, velvety and soft in the mouth, with an extremely long aftertaste.
