A partial fermentation and the static ageing are the key elements in the production and further ageing process of Lustau’s Vintage Series wines.
The fermentation is stopped with the addition of wine alcohol, thus preserving the grape’s natural sugars.
Then the wine is aged following a static and oxidative ageing process in sealed American oak casks which previously aged Oloroso sherry for years.
The wine is bottled only when it has reached its peak.
