The tradition

The tradition behind the Palomino grape, the honesty of the immaculate Albariza soils, the distinctiveness of a late harvest, the nature of each vintage, the concentration from the oxidative maturation, the serenity of static ageing and the heritage of the Oloroso casks is joined by our passion for Sherry and devotion to a privileged land.

The concept

An unusual way of understanding Sherry wines through a lesser-known facet of the Palomino grape. Singular, unrepeatable and unconventional wines with which Lustau invites you to discover new paths and experiences.

The House of Lustau started The Vintage Series in 1989. Every vintage evolves at its own pace, following its own route. The wine is bottled only when it has reached its peak. With no time limits or rush.

A privileged land

Each year, our vineyards receive roughly 3,000 hours of sunshine, accompanied by relatively heavy rainfalls of about 600 l/ m?.

The landscape of the area consists primarily of white limestone hills. This soil type is known as “albariza” and its richness is due to the fact that the region was under water thousands of years ago.

Montegilillo

In our vineyard Montegilillo, located in the “Jerez Superior” area, we cultivate the Palomino variety which is used for these wines. Every year we select the plots that show the best conditions for a late harvest.

Thanks to a careful and exhaustive daily monitoring we attain the desired levels of maturity in the Palomino grapes and the harvest is done rapidly before any rot or raisin signs appear in the berries.

Winemaking and ageing

A partial fermentation and the static ageing are the key elements in the production and further ageing process of Lustau’s Vintage Series wines.

The fermentation is stopped with the addition of wine alcohol, thus preserving the grape’s natural sugars.

Then the wine is aged following a static and oxidative ageing process in sealed American oak casks which previously aged Oloroso sherry for years.

The wine is bottled only when it has reached its peak.
